Rasa gorgeous girl, got instant date, seems disappeared...

I met this cutie girl on the street last week. We had great interaction, I was even surprised with how much we have in common. We lived in the same place in london last year, hanged around in the same places, going to the same gym currently etc... We had an instant date, it went alright then we hit the gym. During our interaction I realised that she is always rushing to somewhere, can't chill. She told me that this happened to her after she moved to her new place as she has t commute gym, work etc,,, and catches things up in the last minute. I started making jokes about it as she started asking me the time every 10 minutes in order not to be late for the gym (I said her 20 min but our instant date lasted around 90 lol) Also realised that she didn't even know gym opening hours :). After that we went to the gym but exercised in different rooms as she had a plates class whatever.. The next day;
Me: Probably you don't even know the bank holiday opening hours. Gym s open till 7pm today. If you wanna go Rush, Rush, Rush!!!!
Her (the next day at 10am): I was rushing and rushing but ended up in the pub. Your message wasn't early enough!! Haha :)
Me (after 11 hours): I wanna take u to a pub and see ur rushing performance in drinking :)) don't think u will be good enough tho... ;)
her (3 minutes later): Yes you guessed it right!
Me (20 minutes later): Let me guess you are much of a wine person
Me (3 days later): Alright, tell me the schedule for the weekend missy..
No response. To be honest I think both my initial interaction and my text game wasn't so bad here. I have no idea why she disappeared suddenly. Any thoughts? Also how should I lead from here? I sent my last text today...
